Japanese cuisine “with a twist” arrives at Village du Soir

Since September 19, a newcomer has been making the culinary scene of the Village du Soir vibrate. His name, "Daydokoro", a play on words inspired by "Daidokoro", meaning cuisine in Japanese. The "Day" is for Greg Day, chef and founder of this concept that is (already) revolutionising the taste buds of gourmets. Japanese "with a twist", the cuisine innovates and surprises, a sweet blend of Gray's different experiences with Japanese chefs, his travels and his childhood culinary heritage.

Daydokoro is a Japanese restaurant, but "with a twist" as the Chef and creator of the concept, Greg Day, insists. An originality, a freedom taken on the recipes, which intend to breathe a breath of fresh air into a cuisine rather (re)known for its rigor. All this, without ever sacrificing taste or discovery.

"What I want is to surprise, to bring this touch of madness to my dishes," explains the Chef. His signature dish is a good example: the traditional sushi is transformed here into a donut with a dough identical to that of Fish and Chips - Greg Day's childhood dish from Brighton in England -, tinted with squid ink, with a crunchy texture, revealing a tuna and avocado tataki when tasted. An explosion of colors, an explosion of flavors.

It is within the Refuge, a legendary place in the Village, that the Daydokoro restaurant has taken up residence. The atmosphere is radically different, as is the cuisine. At Daydokoro, dishes are shared, in a friendly and slightly "crazy atmosphere, perfect for unwinding after work" the Chef mischievously tells us. The energy of the place is also due to the scripting of the cuisine, with a Live Cooking concept allowing you to see the brigade making the dishes and cooking them - on the traditional Japanese Teppanyaki model. With this touch of madness, his passion, his constant search for the best combinations of tastes, Gred Day offers at Daydokoro a definition of cuisine that is not found anywhere else. An avant-gardism, a sort of non-conformism, which is totally in line with the Village's DNA! All that remains (is) to surprise you.
